Quick & Healthy Breakfast Recipes That Are Easy To Make

Breakfast is known as the first meal of a day, which is typically eaten in the early morning before going to the day’s work. Here are two healthy breakfast recipe, which are very easy to prepare and tasty too.

Quinoa Breakfast Bowl:

Ingredients:

  • Quinoa – 1 cup
  • Large eggs – 4
  • Olive oil – 2 tbsp.
  • Kosher salt – to taste
  • Black pepper – to taste
  • Avocado (chopped) – 1
  • Smoked salmon – 6 ounces
  • Fresh lemon juice – for serving
  • Sliced scallions – for serving

Method:

  • Cook the quinoa as directed on the package.
  • Place a large non-stick skillet over medium heat and add olive oil. Add eggs and cook, covered, for about 2 to 4 minutes for slightly runny egg yolks. Season with salt and black pepper to taste.
  • Place the quinoa in a serving platter and top with the fried eggs, smoked salmon and avocado. Drizzle the lemon juice over the top and garnish with scallions.
  1. Scrambled Eggs With Beans, Tomatoes and Pesto:

Ingredients:

  • Large eggs – 4
  • Olive oil – 3 tsp.
  • Grape tomatoes (halved) – 1/2 cup
  • Low-sodium canned white beans (rinsed) – 1/2 cup
  • Store-bought pesto – 1/4 cup
  • Kosher salt – to taste
  • Black pepper – to taste
  • Whole-wheat bread (toasted) – 4 slices

Method:

  • Place the eggs in a medium mixing bowl and beat with 1 tablespoon water. Add salt and black pepper to taste.
  • Place a large non-stick skillet over medium-high heat and add 2 teaspoons of the olive oil. Add the tomatoes and beans to the skillet and cook for 1 to 2 minutes or until warmed through, toss occasionally.
  • Transfer them to a plate and add the remaining olive oil in the skillet. Add the eggs and cook by stirring for about 1 to 2 minutes until set but still soft.
  • Place the eggs on a serving plate and top with the tomato mixture and pesto.
  • Serve with toast.

These two recipes are made with eggs, which are protein superstars. A swirl of pesto adds a fresh, garlicky taste in the second recipe.
